Just a reminder that H-E-B in their efforts to try to get families to enjoy healthier home-cooked meals is not only hosting a give away for a year’s worth of FREE groceries (plus $1000 kitchen upgrade and personalized shopping trip) through their Ready, Set, Cook! promotion, they are also sponsoring a giveaway right here on Screwed Up Texan for a $25 gift card to use at any of their stores (can also be used at Central Market).
TWENTY-FIVE bucks! Hey we can all use that on groceries!

Now here’s one of my favorite healthy dishes:
Light Chicken Salad with Apples and Pomegranates
1 12.5 oz can chicken breast meat, shredded with a fork
2 T light mayonnaise
1/4 cup light plain or vanilla yogurt (I prefer vanilla)
1 medium apple, your choice, cored and cubed
1/2 pomegranate’s seeds (you could use more, but I just double recipe)
salt to taste
Whole wheat bread or your choice
Place shredded chicken breast meat, light mayonnaise, light yogurt, and cubed apple in a medium bowl. Mix to combine. Add pomegranate seeds and stir in. Salt to taste.
To serve simply place 1/4 cup of chicken salad on bread (can be lightly toasted) and top with another piece of bread. If mixture is too dry, add additional light yogurt. Makes 4-6 servings depending on how much mixture is used per sandwich.
Now GO ENTER to WIN the $25 gift card now by clicking HERE.
PS: I won’t count any entries on this post for the give away. You MUST enter at the link above!
Disclosure: H-E-B is compensating me in exchange for hosting this giveaway. Recipe and all opinions are mine.
