Light Chicken Salad with Apples and Pomegranates

Now here’s one of my favorite healthy dishes:

Light Chicken Salad with Apples and Pomegranates

Light Chicken Salad with Apples and Pomegranates

1 12.5 oz can chicken breast meat, shredded with a fork
2 T light mayonnaise
1/4 cup light plain or vanilla yogurt (I prefer vanilla)
1 medium apple, your choice, cored and cubed
1/2 pomegranate’s seeds (you could use more, but I just double recipe)
salt to taste
Whole wheat bread or your choice

Place shredded chicken breast meat, light mayonnaise, light yogurt, and cubed apple in a medium bowl. Mix to combine. Add pomegranate seeds and stir in. Salt to taste.

To serve simply place 1/4 cup of chicken salad on bread (can be lightly toasted) and top with another piece of bread. If mixture is too dry, add additional light yogurt. Makes 4-6 servings depending on how much mixture is used per sandwich.
